  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas

Instructions

  1. In a large skillet over medium heat, heat olive oil and add ground beef; cook until browned. Drain excess fat.
  2. Stir in chopped onion and cook for about 3 minutes. Add minced garlic and cook for another minute. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for 3 to 4 minutes before removing from heat.
  3. Prepare tortillas by sprinkling a layer of cheeses on one half; spoon beef mixture over the cheese and top with more cheese. Fold tortillas in half.
  4. In a clean skillet over medium heat, lightly butter or oil the pan. Cook each quesadilla for 2 to 3 minutes per side until golden brown and crispy.
  5. Allow to cool slightly before slicing into wedges. Serve with sour cream, salsa, or guacamole.
