  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese, for melting over chicken
  • 1 cup shredded mozzarella cheese, for sauce
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

  1. Cook rotini pasta in salted boiling water until al dente; reserve ½ cup pasta water and drain.
  2. Season chicken pieces with Cajun seasoning, smoked paprika, salt, and pepper.

  4. Add minced garlic and half the mozzarella to the skillet; let cheese melt over chicken.
