  • 1 ¾ cups whole milk
  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • 3 teaspoons powdered vegan gelatine
  • 1 ½ cups heavy cream
  • ⅓ cup granulated sugar
  • 1 tablespoon chopped pistachios (for toffee)
  • ¼ cup white granulated sugar (for toffee)
  • 1 tablespoon water (for toffee)

Instructions

  1. In a saucepan, heat 1 cup of whole milk with chai tea bags, cloves, cinnamon stick, ground ginger until simmering. Steep for 10 minutes, then remove tea bags and spices.
  2. In a small bowl, sprinkle vegan gelatine over the remaining cold milk and let bloom for 5 minutes.
  3. Whisk sugar into warm chai-infused milk until dissolved. Stir in heavy cream and vanilla extract, then incorporate the bloomed gelatine until fully blended.
  4. Pour into serving cups or molds and refrigerate for at least 4 hours or until set.
  5. For the pistachio toffee, heat sugar and water in a saucepan until golden brown; mix in chopped pistachios and pour over set panna cotta before serving.
