  • ½ cup diced celery
  • ½ red bell pepper, diced

  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup shredded mild cheddar cheese
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté onion, celery, red bell pepper, and garlic until soft (5-7 minutes).
  2. Add sliced chicken sausage and brown for about 5 minutes.
  3. Stir in Cajun seasoning and other spices to coat the mixture.
  4. Pour in chicken broth and add cubed potatoes; bring to a boil then simmer covered for about 30 minutes until tender.
  5. Stir in heavy whipping cream and cheddar cheese until melted. Adjust seasoning as needed.
