  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated white sugar, and vanilla until smooth; set aside.
  2. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a separate bowl, combine granulated white sugar, black cocoa powder, all-purpose flour, baking powder, and salt.
  4. Cream together softened unsalted butter, light brown sugar, and additional granulated white sugar until fluffy; mix in egg yolks and vanilla.
  5. Gradually add the dry mixture to the wet mixture until just combined.
  6. Scoop about one tablespoon of cookie dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, then fold the dough around it to form a ball.
  7. Roll each ball in black cocoa sugar before placing on the prepared baking sheet.
  8. Bake for 10-12 minutes until edges are set but centers remain soft; cool on a wire rack before serving.
