  • 2 cups roasted or canned beets (cut into 1/2" pieces)
  • 1 medium cucumber (seeded and thinly sliced)
  • 4 oz feta cheese (crumbled)
  • 1/4 cup fresh dill (chopped)
  • Dressing: 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • 3 tbsp extra virgin olive oil

Instructions

  2. In a large bowl, combine sliced beets and half of the dressing. Let sit while preparing the remaining ingredients.
