  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté until softened (about 3 minutes).
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well to combine.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender.
  6. Meanwhile, in a small saucepan on low heat, melt the remaining butter and whisk in Parmesan cheese, cheddar cheese, and milk until smooth.
  7. Pour the cheese sauce into the skillet with the cooked beef and rice mixture; stir until combined.
  8. Cook uncovered for an additional few minutes to meld flavors. Garnish with fresh parsley if desired before serving.
