  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef until browned on all sides (about 5-7 minutes), then remove from the pot.
  2. In the same pot, sauté onions and garlic until soft (3-4 minutes). Add carrots and potatoes; stir to combine.
  3. Return the beef to the pot. Pour in beef broth, add apple vinegar if using, bay leaf, thyme, and Worcestershire sauce. Mix well.
  4. Bring to a boil over high heat, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.
  5. While simmering, hollow out crusty bread rolls for serving.
  6. Once cooked, remove bay leaf and ladle hot stew into each bread bowl.
