  • 4 slices sourdough or artisan bread
  • 4 oz brie cheese, thinly sliced
  • 2 tablespoons butter, softened
  • 1 cup fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and salt. Cook for about 5 minutes until the mixture thickens, then let cool slightly.
  2. Heat a non-stick skillet over medium-low heat and butter one side of each slice of bread.
  3. Place two slices of bread in the skillet, buttered-side down. Layer on brie cheese followed by the balsamic-blackberry mixture and another layer of brie cheese. Top with remaining slices of bread (buttered-side up).
  4. Cook for 2-3 minutes on each side until golden brown and cheese is melted. Let rest for a minute before slicing diagonally.
