  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes into bite-sized pieces. Par-boil in water for 6–8 minutes, then drain and let steam dry.
  3. In a baking dish, toss the par-boiled potatoes with olive oil, thyme, oregano, salt, black pepper, and red chili flakes.
  4. Roast for about 30–40 minutes until golden brown and crispy.
  5. Add the block of feta cheese and squeezed lemon to the center of the dish after the potatoes have cooked for about 20 minutes.
  6. Remove garlic after roasting; squeeze out soft garlic from skins and mash it.
  7. After another 15 minutes in the oven, mix in mashed garlic and basil with the potatoes.
  8. Drizzle honey over the top before serving.
