  • 1 teaspoon vegetable or canola oil
  • ½ medium red onion (finely chopped)
  • 1½ teaspoons minced fresh thyme
  • ½ teaspoon salt (divided)
  • 16 ounces skinless, boneless chicken breasts (4 cutlets)
  • ⅓ cup all fruit or reduced-sugar apricot jam
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Add chopped onion and sauté for about 5 minutes until softened.
  2. Season chicken cutlets with thyme and ¼ teaspoon salt. Add to the pan and cook for 6 minutes on each side until fully cooked; remove and keep warm.
  3. Lower heat and add remaining salt, apricot jam, balsamic vinegar, and pepper to the pan, stirring constantly until the sauce is smooth.
  4. Serve the chicken topped with the warm sauce immediately.
