  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves; set aside.
  3. In another bowl, cream the softened butter and brown sugar using an electric mixer until fluffy.
  4. Add the egg and vanilla extract to the butter mixture; mix until combined.
  5. Gradually add the reduced apple cider to the wet mixture while mixing on low speed.
  6. Slowly incorporate the dry ingredients into the wet mixture until just combined.
  7. Drop dollops of batter onto prepared sheets about 2 inches apart.
  8. Bake for around 10 minutes or until edges are lightly browned; cool on sheets before transferring them to a wire rack.
  9. In a mixing bowl, beat together whole milk, unsalted butter, powdered sugar, reduced apple cider, vanilla extract, and salt until creamy and smooth.
  10. Spread or pipe filling onto the bottom side of half of the cookies. Top each filled cookie with another cookie to create a sandwich.
  11. Drizzle caramel sauce over assembled whoopie pies and sprinkle with flaky sea salt before serving.
