  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil (or other neutral oil)
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish with butter or spray it with oil. Line it with parchment paper.
  2. In a large sauté pan, bring the apple cider to a boil. Reduce by half, about 5 minutes. Add diced butter into hot cider and whisk until combined.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt.
  4. Slowly whisk the boiled apple cider into your wet mixture until fully incorporated.
  5. Gently stir in the flour until just combined; avoid over-mixing.
  6. Pour your batter into the prepared baking dish. Bake for 22–25 minutes until puffed and golden brown.
  7. Once baked, cool for about 5 minutes. Place cool butter on top of the cake and let it melt evenly.
  8. In a small bowl, combine granulated sugar and ground cinnamon. Sprinkle over the top of the cake.
  9. Carefully remove the cake using the parchment sling and let it cool completely before cutting.
