  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan until it thickens to about 1 cup; allow to cool.
  2. In a bowl, blend cold cream cheese with sugar and vanilla until smooth; refrigerate.
  3. Cream together softened butter and sugars until fluffy; mix in egg yolks and cooled apple cider reduction.
  4. Combine dry ingredients in another bowl; gradually add to wet mixture until combined.
  5. Preheat oven to 350°F (175°C). On a lined baking sheet, place cookie dough, add cheesecake filling, and top with more dough.
  6. Bake for about 11 minutes or until golden on the edges.
